Spinach Salad

Spinach Salad
2½ oz washed, ready to eat spinach
     (about ¼ of a 10-oz bag)
2 C grated carrots
2 T low fat vinaigrette dressing
Salt and freshly ground black pepper

t = teaspoon
T = tablespoon
C = cup


Tear spinach into bite-sized pieces and place on individual salad plates. Spoon on carrots and top with dressing.

Serves 2
